Homemade Graham Crackers

While we were away, I was doing some browsing online
and found a recipe for graham crackers (which my kids
love -- I even have had people send us boxes from the
States!)

We gave the recipe a try and they turned out wonderfully.
In fact, we made TWO batches in the past couple of days.

I rolled ours out really thin, so they are very crunchy.

LD said they were so good that he wanted them to be
called cookies, not graham crackers!



































Unfortunately I don't have the link at the moment where
I found this recipe. I'll try to hunt that down and give due
credit (don't have time now because I'm rushing to get
the kids ready for swim lessons this morning).

Quickly, here's the ingredients. I just dumped it all in a
bowl, mixed it, rolled it as thin as possible between two
sheets of baking paper, chilled in the fridge for an hour,
poked holes in them (I'm not sure if that's just for
appearance or what, but of course the kids liked doing
that part!) and baked for 8-10 minutes at roughly 170/350F.

1/2 cup all purpose flour
1 3/4 cup wholemeal (whole-wheat) flour
1/2 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2-3/4 tsp cinnamon (I used more than the original recipe)
1/2 cup butter
2 tblsp honey
2tblsp molasses
1/4 cup cold water
1 tsp vanilla extract

Better run -- it's been SO busy with daily swim lessons
this week, trying to catch up on laundry, the 10-inch long
grass, and other assorted pulls on my time... you know,
making statues of Scooby Doo and Cinderella out of
plaster-of-paris, reading to the kids, play dates, etc.

Oh--and dealing with my hearing aids (I had lots of
ear infections as a kid and lost a lot of my hearing), which
have BOTH decided that this is the end of their lives.  My
hearing aids have BOTH stopped working in the past two
weeks -- well they work but I hear wHOooooshh, whirrrr,
zzzzz -- whooosh.  Not very soothing to listen to!  I had a
long appointment (Mon.) with an audiologist trying to sort
things out (sending one aid away for repair and lining
things up to get new aids). Did you know that hearing
aids (for most Americans) are not covered by insurance.
They are NOT cheap,  let me tell you.  For the price of
my hearing aids we could buy a used car (quite a bit nicer
than the station wagon we have now!!!!) Sigh... but it's
not like hearing is an optional thing in my life, right?!
And I'm very grateful I live in a time where I can have
perfectly normal hearing (with this technological help).
[And I love, love the fact that I can turn off sound when
I want to concentrate to read, fill out paper work and
things like that.  If given the option now, I would choose
NOT to hear like most "normal" people. I can't imagine
having to hear all the time.]

How'd I get so side-tracked?!! Sorry if you're still
reading through my ramblings at this point!!
